Paella is a typical dish of Spanish gastronomy and originally comes from the province of Valencia, located on the east coast. The main ingredient of this dish is rice, which is cooked in a paella, hence its name. Valencian paella is made with traditional ingredients that may vary, but normally include rice, chicken, rabbit, green beans, salt, tomato, olive oil, artichoke and saffron is added to give the rice its characteristic yellowish color.

Originally this dish was part of the Valencian peasants' diet, so its roots are of humble extraction. Nowadays, three types of paella are made: chicken or rabbit paella, seafood paella or the one known as mixed paella.
