The "do Xeito" sardines come from one of Galicia’s most traditional and sustainable fishing techniques, practiced since the 15th century. Today, 425 boats in the region continue this method, fishing at dusk and dawn. During the catch, each fisherman carefully removes each sardine from the net while it is still alive, preserving its freshness and quality until processing.

Once canned, the sardines undergo a maturation process in olive oil, which enhances their flavor and texture over time. For this reason, they have been aged for eight months after production to ensure they reach their optimal taste. This is a limited edition of 1,000 units, sourced from Rianxo (A Coruña).
