Instructions:

  1. Begin by heating the extra virgin olive oil in a large paella pan or a wide, shallow skillet over medium heat.

  2. Add the dried ñora pepper to the hot oil and fry it briefly until it softens and releases its aroma. Then, remove it from the oil and set it aside.

  3. In the same pan, add the sofrito (if you didn't use the one from the kit) and the paprika. Sauté them for a few minutes until they are well combined.

  4. Add the mixed seafood to the pan and cook them until they are nearly done, leaving them slightly crispy. Then, remove them from the pan and set them aside.

  5. In the same pan, add the Bomba rice and stir well to coat it with the flavors of the sofrito and the seafood juices.

  6. Pour the hot fish broth over the rice and add the saffron threads (you can crumble them between your fingers before adding). Stir everything together and season with salt and pepper to taste.

  7. Cook the paella over medium heat for about 15-20 minutes, or until the rice is tender and has absorbed most of the broth. Be sure not to stir too much once the rice is in the pan to allow the formation of a golden and crispy layer at the bottom known as "socarrat."

  8. Place the reserved seafood on top of the paella and heat them for a few minutes until they are piping hot.

  9. Garnish the paella with lemon wedges and fresh parsley before serving.
