Paella is a delicious and iconic Spanish dish that has become popular all over the world. It's a one-pan rice dish that typically includes seafood, meat, vegetables, and saffron. - 1kg La fallera bomba rice
- 2l Ferrer fish fumet
- 1g Safrante saffron
- La Barraca sweet paprika
- 1kg mixed seafood (shrimp, mussels, squid, etc.)
- 1 onion, chopped
- 1 red bell pepper, chopped
- 3 cloves garlic, minced
- 2 tomatoes, chopped
- 1 cup green beans, trimmed (Optional)
- 1 cup peas
- 1 lemon, cut into wedges
- Salt and pepper
- Olive oil
Heat a large paella pan or a wide and shallow skillet over medium-high heat. Add enough olive oil to cover the bottom of the pan.
Add the onion, red bell pepper, and garlic to the pan. Cook for a few minutes until the vegetables are softened.
Add the chopped tomatoes and cook for a few more minutes until the tomatoes start to break down and create a sauce.
Add the La Barraca sweet paprika and sauté for a minute or two until the paprika is fragrant and well mixed with the vegetables.
Add the La fallera bomba rice and stir to coat the rice with the vegetables and paprika.
Add the Navarrico fish fumet and the saffron to the pan. Stir to combine everything and bring to a boil.
Reduce the heat to low and simmer for about 15-20 minutes, stirring occasionally to prevent the rice from sticking to the bottom of the pan.
While the rice is cooking, clean and prepare the seafood. Season the seafood with salt and pepper.
When the rice is almost done (about 5-7 minutes before it's ready), add the seafood, green beans, and peas to the pan. Gently push the seafood into the rice so that it's submerged.
Cover the pan with a lid or aluminum foil and cook for another 5-7 minutes until the seafood is cooked through and the rice is tender and has absorbed all the liquid.
Remove the pan from the heat and let it rest for a few minutes.
Garnish with lemon wedges and serve hot.
