Ingredients:

  • 300 grams of Bomba rice (ideal for paella)
  • 1 large onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 zucchini, diced
  • 200 grams of green beans, trimmed and cut into bite-sized pieces
  • 200 grams of artichoke hearts, halved
  • 1 teaspoon of sweet paprika (La Dalia Sweet Paprika)
  • 1 liter of vegetable fumet (El Navarrico Vegetable Fumet)
  • Extra virgin olive oil
  • Saffron threads (optional)
  • Salt and pepper to taste
  • Lemon wedges and fresh parsley for garnish

Instructions:

  1. In a large paella pan, heat a few tablespoons of extra virgin olive oil over medium heat. Add the finely chopped onion and minced garlic, and sauté until they become tender and fragrant.

  2. Incorporate the thinly sliced red, yellow, and green bell peppers, and continue to cook for a few minutes until they start to soften.

  3. Add the diced zucchini, trimmed green beans, and halved artichoke hearts to the pan. Stir well and cook for a few more minutes until the vegetables are slightly tender.

  4. Sprinkle sweet paprika over the vegetables and mix thoroughly to evenly coat them.

  5. Add the Bomba rice to the pan and stir it with the vegetables to absorb the flavors.

  6. Pour in the vegetable fumet and season with saffron threads (if using), salt, and pepper to taste. Bring the mixture to a boil, then reduce the heat to medium-low.

  7. Allow the paella to simmer for about 15-20 minutes, or until the rice is cooked and has absorbed most of the liquid. Stir occasionally.
